Dear Coffee Klatch,
My favorite coffee is Doma, from a Northwest coffee company located in Idaho. I like very strong coffee that is NOT espresso, with a little good cream. If I am eating any kind of thing with it, I like it to be a good bread or a sweet roll. I hardly ever do chocolate and coffee together because I am a purist who likes each flavor to shine without interference. ( Though recently I had a cold mocha that was pretty darn good!!)
I am on my first cup of Italian roast with cream this A.M. I slept late.

Oooh, mushroom caviar on potato chips- why haven't I ever thought of that before? I'll bring extra potato chips and try not to pig them all myself.

Mushroom caviar: take a good little pile of your favorite mushrooms, wash them and dice them up. Dice an eighth of an onion very very fine, moosh up a clove of garlic and saute in a bit of olive oil until the onions are translucent. Then toss the mushrooms in and cook until they are getting juicy. Take it all off the fire, add some spices (I use different ones at different times, but I like rosemary, thyme, and oregano the best). In a separate container, soften 8 ounces of cream cheese, then pour the hot mixture over the cream cheese and mix gently. Eat on bagels, potato chips, or off your fingers (How rude! Forget I said that.) You can eat it hot or cold.

OUCH that sounds VICIOUSLY tasty!!!!
So you cook mushrooms untill they are 'just' done? yes yes with chips!!!!

Anyone has a recipe for some other tasty chip dip?

Oh yum!! I knew I shouldn't come here today! I've spent the morning starving while I have a glucose tolerance test, missed out on my morning coffee (ggggrrrr!!!), and now I'm HUNGRY, that mushroom caviar sounds yum yum. I do one similar with just garlic, olive oil, coriander seed (ground) sautee the chopped mushrooms until they're tender, salt and pepper them, add some coriander leaves and a dash or two of wine (white or red, doesn't matter). Leave the lid on and let it cool. You can add some spring onions or chives, but go easy because the coriander is the flavour to bring out. I guess you could add in some cream cheese and it could be another variation for your chips, bagels, or fingers (ooops! I did it too!)

I bought the ingrediants so willbe trying that On Friday or Saturday night! Cant wait! I found some fresh thyme and oregano- this is great luck! Thank you Shanazel, you are such a dear! (2 big bags of chips included!)
